I just found a trick where you can change your position within the car. Basically you can put the drivers seat back or really just enlarge your field of view. The effect is awesome! Now we can use all mirrors like they are ment to be used and see more of the cockpit.

This is how it works:
Go to "Your profile" -> "Multiple Screens" -> Enable -> "Angle between Screens" -> set this to 75%-90%

I always knew there was a way..from the developers videos they were always further back...wondered how I could get the same view.
